Healthy Beetroot Macaroons

Healthy Beetroot Macaroons

This combination might sound a bit alien to a lot of people, where the flavours, in fact, complement each other very well. Beetroot powder has a sweet taste and it gives the healthy beetroot macaroons their distinctive vibrant colour.

Benefits of Beetroot Powder

Beetroot Powder is a rich and nourishing form of pure, powdered beetroot. It contains all the healthy nutrients from this fabulous root. Powdered Beetroot is a great supplement for people with an active lifestyle. Its high levels of naturally occurring nitrates and potassium contribute to normal blood pressure and magnesium helps to normal muscle function. Along with those important minerals, it contains Vitamin B6, Vitamin C and folic acid, B6 and folic acid, which supposedly helps to support the immune system, brain function and the synthesis of amino acids.

Something else that I really like about this recipe is how easy it is to make. It doesn’t require tonnes of unusual ingredients, the beetroot powder is as exotic as it gets and with €1.40 it surely doesn’t break the bank.

All the ingredients get mixed in a blender and scooped onto a sheet of parchment paper, easy, isn’t it?

It’s amazing how something that simple can be so delicious. Everybody loves how colourful these beetroot macaroons are. Believe me, you will get lots of recipe requests once you start sharing them. These Healthy “No-Bake” Banana Oat Bites and Healthy Chocolate Chip Cookies are also some real crowd-pleasers, make sure to check them out as well.

  • Add all ingredients to the food processor and mix until the dough starts to clump together. This will usually take around 30 seconds.
  • The texture depends a little bit on the moisture of your desiccated coconut, if you feel that it's too dry, add a little more coconut oil, in case it's too wet you can add a bit more coconut flour.
  • Use a measuring spoon or something similar that is round-shaped to form little macaroons.
  • Place them on a parchment-lined board and freeze them until they go solid, now transfer to the refrigerator. Enjoy
