Healthy Beetroot Macaroons
This combination might sound a bit alien to a lot of people, where the flavours, in fact, complement each other very well. Beetroot powder has a sweet taste and it gives the healthy beetroot macaroons their distinctive vibrant colour.
Benefits of Beetroot Powder
Beetroot Powder is a rich and nourishing form of pure, powdered beetroot. It contains all the healthy nutrients from this fabulous root. Powdered Beetroot is a great supplement for people with an active lifestyle. Healthy Beetroot Macaroons
Ingredients
- 1 1/2 cups desiccated coconut
- 4 tablespoons brown rice syrup or raw honey (not vegan)
- 3 tablespoons coconut oil extra virgin
- 2 tablespoons coconut flour
- 3 teaspoons beetroot powder
- 1 teaspoon vanilla extract
- a squeeze of lemon or lime juice
- 1 pinch sea salt
Instructions
- Add all ingredients to the food processor and mix until the dough starts to clump together. This will usually take around 30 seconds.
- The texture depends a little bit on the moisture of your desiccated coconut, if you feel that it's too dry, add a little more coconut oil, in case it's too wet you can add a bit more coconut flour.
- Use a measuring spoon or something similar that is round-shaped to form little macaroons.
- Place them on a parchment-lined board and freeze them until they go solid, now transfer to the refrigerator. Enjoy
