How to make Mango Coconut Ice Cream
The creamy coconut milk mingled with the mango is simply so refreshing and best of all they are vegan and sugar-free. These mango coconut ice cream lollies are easy to make and popular with adults and children alike. They are the perfect treat for a hot summer day.
You can make them with either coconut milk or coconut cream if you opt for the coconut milk make sure to use the full-fat version. The only other ingredient you will need are fresh mangos, yes, you read that right this mango coconut ice cream is made from only two ingredients. Always choose a mango that is nice and ripe that will give you enough sweetness and there shouldn’t be a need for adding sugar.

Summer in Dublin
Over the last couple of days, Ireland has been experiencing a heatwave and I am absolutely loving it. Summers in Dublin are fantastic for foodies because there is a vast variety of food related event and festivals.
The weekend has been very exciting and I decided to start it with a talk by Dr Rangan Chatterjee from the BBC program Doctor in the house. It was very inspiring and motivating to listen to a medical doctor who not just acknowledges the importance of nutrition but also practices it. His basic recipe for health he calls the four pillars of health, Eat, Sleep, Move & Relax. That might sound a bit over simplistic but in the end, this is exactly what it comes down to.
Saturday was followed by a visit to the Taste of Dublin food festival which attracts food producers and exhibitors from all over Ireland and the UK. With around €15 admission fee and an average price of €7 per dish, it certainly doesn’t come cheap but the quality was outstanding. I spent a lot of time talking to producers, sampling food and watching food demos by some of Ireland’s most renowned chefs and will hopefully be able to put a few of their tips into practice. There are many more events coming up over the next couple of weeks and I am looking forward to eating my way around Dublin.

Vegan Mango Coconut Ice Cream
Ingredients
- 2 1/2 cups mango diced
- 1/2 cup coconut cream
- popsicle/ lolly moulds
- lolly sticks
Instructions
- Add the diced mango into a blender and blend until it turns into a smooth puree.
- First divide the coconut cream evenly across the moulds and then layer the mango puree on top.
- Give it a tiny stir with the wooden lolly stick to achieve a marble effect.
- Place the wooden stick in the centre and freeze for a minimum of 4 -6 hours.
