Good Vibes Cookbook – Tasty, Super-Healthy Recipes
The Good Vibes Cookbook is the latest addition to my extensive cookbook collection and I was delighted to receive a copy for review from Orca Publications.
Inspired by travel, surfing and a healthy outdoors lifestyle, the Good Vibes Cookbook is the third publication by the authors of the Surf Café Cookbook and Surf Café Living. It is packed with delicious, nutritious recipes using ‘healthy’ foods that are good for you.
On a sunny day, I started reading it in the hammock on our balcony. This really complimented the mindset created by their beautiful and vibrant illustration and stories. It actually re-ignited my longing to travel again.
I have travelled to many places around the world and was fortunate to get to taste a huge variety of local cuisines. The vivid descriptions of flavours combined with a short story of origin made me want to jump straight into the kitchen (or plane).
About the Authors
Food and the outdoors are Jane and Myles Lamberth’s great passions.
They have travelled the world in search of surf, foodie delights and diverse cultures and this book brings together a variety of influences from their global travels and their lifestyle at home in Ireland.
Based on the West Coast of Ireland, authors Jane and Myles are behind the successful surfside cafe, Shell, in Strandhill. There they tried and tested all the recipes in the book, to bring you the best locally-produced, easy-to-make food.
Myles learnt his cookery skills in unique locations around the world: he’s cooked on campfires in Africa while river guiding, been a chef at exclusive chalets in the French Alps, and worked for a top catering company in the US where he cooked for musicians like Annie Lennox, The Gypsy Kings and even Snoop Dogg. Jane, meanwhile, began her career in marketing but her love of travel soon took her away from the city to destinations that offered surf or snow.
What makes this book unique
Jand and Myles start and finish the book by championing other Irish foodies and producers. They give lots of recommendations and tips that will make you want to visit Ireland’s west coast.
In their cupboard essentials, they give you an idea of the products that they are using throughout the book. Also, they briefly explain the nutritional benefits and uses of each ingredient.
Don’t worry, you won’t have to chase around town to find rare ingredients, everything they use is available in every well-stocked supermarket or health food store.
The pages are stuffed with nourishing, mouth-watering recipes that will enrich your diet and make you feel great. Wake up to energising snacks such as the Super Green ‘Superman’ Smoothie and Buddha Breakfast Bowl. You will learn how to create amazing dishes like Asian Slaw, Pea and Trout Salad and Slow Poached Coconut Chicken.
If you have a sweet tooth like me you will love their Elderflower and Raspberry Cake and Deliciously Decadent Doughnuts. These should obviously be a treat rather than a staple.
Something really unique are their picnic and barbeque tips but they also give you options to prepare everything at home.
The recipes are well written and easy to follow. One thing that I miss is the preparation and cooking time. Personally, I think it’s nice to be able to see at a glance how long a recipe will take to prepare.
This dish has become one of my favourite Sunday breakfast recently, get the recipe for this delicious Moroccan Scramble with Merguez Sausages.
Conclusion
I have really enjoyed reading and cooking recipes from the Good Vibes Cookbook. It has been rare that I have recreated as many recipes from a cookbook as I have with this one. If you are a fan of healthy cooking and living this book is for you.
It is packed with great tips and you will learn how to:
- Master your cooking and plan your week ahead with authentic recipes
- Wake up to power-boosting breakfasts
- Discover how to make vibrant, healthy lunches
- Indulge your sweet side with both naughty and nourishing treats
- Be inspired to create simple and satisfying suppers
It is sold as a flexiband which is a bit sturdier than a regular paperback but a bit lighter than a hardback.
