Peel and cut the sweet potato into bite-sized chunks, place them into a small saucepan and cover with water. Boil for about 15 minutes or until you can easily pierce them with a knife.
Place the boiled potato into a medium-sized bowl and mash with a fork.
Add in the melted coconut oil, milk of your choice, eggs and maple syrup and mix until well combined.
In a separate bowl, mix the whole spelt flour, baking soda, salt, and spices.
Add the dry ingredients to the wet ingredients and stir until combined. Do not over mix. Let the batter stand for about 10 minutes and then follow the instructions of your waffle maker to make the waffles. Cool the waffles on a cooling rack.
