Sweet Potato Waffles Two Ways

These Sweet Potato Waffles are delicious and easy to make. They can be enjoyed sweet or savoury and are vegetarian, dairy and gluten-free. Sweet potato waffles make a perfect decadent breakfast or are a simple quick fix when somebody just shows at your door.

Depending on your mood you can either serve them with coconut yoghurt and fruits or savoury with spinach, avocado and eggs but feel free to be as creative as you like.

Recently, we went to a wedding of a dear childhood friend in Germany and we really had an amazing time. It was one of the best-planned weddings I have ever attended. I found it particularly thoughtful that they provided free flip-flops for every woman at the wedding, how ingenious is that? If you are anything like me and only wear high heels for special occasions you will certainly understand what I am talking about.

Usually, I only travel with hand luggage when I am going home but this time I had booked an additional suitcase which gave me the opportunity to bring a few more pieces back to Ireland. As I was rummaging through the pile of boxes that are clogging up my parent’s basement, (sorry mum 😉 ) my old waffle iron caught my attention. Technically it is my mum’s old waffle iron from the 70’s but miraculously it found its way into my belongings and it still works like magic.

It instantly brought back memories of my granny and me baking waffles in her kitchen. I loved being in her kitchen, she was one of these wonderful people who would be able to cook anything from the top of their head. I am so grateful that my mum asked her to write down some of her recipes when her health started to deteriorate. We made all sorts of wonderful waffle creations, as it was one of the go-to dishes for when unexpected guests arrived. I still remember how we once made 70 waffles for a school fair, everybody loved grannie’s waffles.

In memory of my granny, I wanted to create a healthier version of our good old waffles and I am sure even though she had probably never eaten a sweet potato in her entire life she would have loved these sweet potato waffles.

Sweet potato Waffles Two Ways

Ingredients

Sweet Potato Waffle Dough

  • 1 large sweet potato about 350g sweet potato
  • 2 Tablespoons coconut oil melted
  • 1 cup plantbased milk milk works as well and will result in crispier waffles
  • 2 eggs beaten
  • 1 Tablespoon maple syrup
  • 1 1/4 cup wholegrain spelt flour use chickpea flour for a gluten-free version
  • 1/2 Tablespoon baking powder gluten-free
  • 1/2 Teaspoon salt
  • 1/8 Teaspoon ground nutmeg
  • 1/8 Teaspoon ground cloves
  • 1/2 Teaspoon ground cinnamon

Savoury Topping

  • 1/2 avocado
  • 1/2 cup steamed or blanched spinach
  • 1 fried or poached egg
  • smoked paprika
  • pepper
  • sea salt

Sweet Topping

  • coconut or plain yoghurt
  • 1/2 banana
  • 1 handful berries
  • maple syrup to taste

Instructions

  • Peel and cut the sweet potato into bite-sized chunks, place them into a small saucepan and cover with water. Boil for about 15 minutes or until you can easily pierce them with a knife.
  • Place the boiled potato into a medium-sized bowl and mash with a fork.
  • Add in the melted coconut oil, milk of your choice, eggs and maple syrup and mix until well combined.
  • In a separate bowl, mix the whole spelt flour, baking soda, salt, and spices.
  • Add the dry ingredients to the wet ingredients and stir until combined. Do not over mix. Let the batter stand for about 10 minutes and then follow the instructions of your waffle maker to make the waffles. Cool the waffles on a cooling rack.
  • Add the toppings of your choice and enjoy.
