This combination might sound a bit alien to a lot of people, where the flavours, in fact, complement each other very well. Beetroot powder has a sweet taste and it gives the healthy beetroot macaroons their distinctive vibrant colour.

  • Add all ingredients to the food processor and mix until the dough starts to clump together. This will usually take around 30 seconds.
  • The texture depends a little bit on the moisture of your desiccated coconut, if you feel that it's too dry, add a little more coconut oil, in case it's too wet you can add a bit more coconut flour.
  • Use a measuring spoon or something similar that is round-shaped to form little macaroons.
  • Place them on a parchment-lined board and freeze them until they go solid, now transfer to the refrigerator. Enjoy
