Easy No Fuss Sweet Potato Toast Three Ways

Recently I have been very busy so I didn’t find much time to prepare elaborate breakfasts, that’s where these little beauties come into play. They make a great substitute for bread as they have a lower glycemic index than most loaves of bread. I promise that you will fall in love with the sweet smell of these crunchy sweet potato toasts.

How to make Sweet Potato Toast in a toaster?

Wash your sweet potato and cut it into 5 mm wide slices, I usually cut mine lengthwise but this depends on the size of your sweet potatoes. You can cut them with a regular knife or slice them with a meat slicer, just watch your fingers as they sometimes can be a little bit tricky to cut. Try not to make them any wider than 5 mm or you will have troubles getting them to fully cook. Now, crank up the heat of your toaster as much as you can and toast each slice 2-3 times. Your sweet potato toasts will turn slightly brown and get a thin crunchy crust, they are done when they are slightly soft in the middle.

How to make Sweet Potato Toast in the oven?

This method is great if you want to prepare many at the same time or have a little bit more time on your hands. It’s also easier to determine if they are done because you can keep an eye on them.

Preheat your oven to 175°C (350F). Wash your sweet potatoes and cut them into 5 mm wide slices. Place the sweet potato slices onto a parchment-paper-lined baking sheet, drizzle with a little olive oil and season with cinnamon or salt and pepper if you like (optional). Bake for 25-35 minutes depending on your oven.

You could also sprinkle cinnamon on top.
